Portion of skimmed cottage cheese<br \/>\n1 large egg<br \/>\n1 tablespoon finely chopped basil<br \/>\n2 finely chopped scallions, including 3 inches of the green part<br \/>\n\u00bc cup shredded parmesan cheese<\/p>\n<p><img decoding=\"async\" class=\" wp-image-1792 aligncenter\" src=\"https:\/\/ranchonatura.com\/wp-content\/uploads\/2018\/10\/CUPCAKES-DE-LASAN\u0303A-DE-VEGETALES-300x103.jpg\" alt=\"\" width=\"670\" height=\"230\" srcset=\"https:\/\/ranchonatura.com\/wp-content\/uploads\/2018\/10\/CUPCAKES-DE-LASAN\u0303A-DE-VEGETALES-300x103.jpg 300w, https:\/\/ranchonatura.com\/wp-content\/uploads\/2018\/10\/CUPCAKES-DE-LASAN\u0303A-DE-VEGETALES-scaled-500x172.jpg 500w, https:\/\/ranchonatura.com\/wp-content\/uploads\/2018\/10\/CUPCAKES-DE-LASAN\u0303A-DE-VEGETALES-768x264.jpg 768w, https:\/\/ranchonatura.com\/wp-content\/uploads\/2018\/10\/CUPCAKES-DE-LASAN\u0303A-DE-VEGETALES-1024x352.jpg 1024w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/><\/p>\n<p>Process :<\/p>\n<ul>\n<li>Preheat the oven to 350 degrees F.<\/li>\n<li>Cut the lasagna noodles into 36 circles using a 2 \u00bd inch diameter cookie cutter.<\/li>\n<li>Cut the zucchini into 24 circular slices using a 2 \u00bd inch diameter cookie cutter.<\/li>\n<li>Break the egg in a medium bowl and beat. Add ricotta cheese, basil and chives. Season with \u00bd teaspoon of kosher salt and pepper to taste.<\/li>\n<li>Grease the muffin molds with cooking spray, pour a spoonful of tomato sauce into the bottom of each.<\/li>\n<li>Then place a serving of lasagna and add about two tablespoons of cheese. Place a layer of zucchini slices and cover with another portion of pasta. Repeat the process once more for each mold.<\/li>\n<li>Each mold should have two layers of zucchini and cheese and three layers of lasagna noodles. Pour a few tablespoons of tomato sauce over each lasagna pan.<\/li>\n<li>Sprinkle with Parmesan cheese. Cover with aluminum foil and bake 40 minutes.<\/li>\n<li>After 40 minutes, remove the pan from the oven and let stand for five minutes. Remove the lasagna molds from the pan by lifting them with a spatula.
